That's why I've generally applied the updates during the day, then come in the next morning and reboot first thing that way I'm only down the reboot time of the server. Sometimes the updates can take a long time to apply and then you have the reboot time for servers which, depending on age can be significant, then adding in the boot time of the VMs too and that time is eaten up quite a bit. My main thing is, unless I remote in, I only have about 40min that people aren't here in the morning for a reboot and I don't like rebooting my hypervisors unless I'm in the office.
